Salmon and orange spinach salad

"Going to McDonald's to get salad is like going to a brothel to get a hug".

Tried this salad a few years ago at a friends' place. Remembered it when I had invited a friend over for a light dinner. The additional "touch up" for the salad I ate a few years back was the balsamic vinegar reduction. A wonderful, refreshing and taste bud rewarding meal.

All you need is just a few ingredients - lightly smoked salmon, fresh spinach, oranges, onion, pitted kalamata olives, a bit of extra virgin olive oil and balsamic vinegar reduction. The result - indulging, tasty, fresh and a light meal, best served with ciabatta or rye bread.
Slice the onion. Remove the skin from the orange. And that's it - toss all of the ingredients and drizzle with balsamic vinegar reduction.
