Molten chocolate cake

"Chocolate is the answer! Who cares what the question is!"

Le chocolat... I don't have much of a sweet tooth, but when I get a craving for dessert, I do take it very seriously :). Chocolate in any shape and form being my all time favorite. And then - chocolate with cherries is the ultimate combination!
Thanks to my colleague who shared the most simple recipe. This baby melts in your mouth! Literally! It is so amazingly simple to make! They've turned out less than perfect only once, but still were very good. There was a good excuse for "not so perfect" outcome however. I was making it on unfamiliar land - in a friend's kitchen and and using bigger ramekins. 

Ingredients:
* 100 g dark chocolate
* 100 g butter
* 2 large eggs
* 2 tablespoons sugar
* 2 tablespoons flour
* 50 ml rum or brandy
* Icing sugar for dusting

These ingredients turn into 4 perfect and delicious lava cakes.
Preheat the oven to 240 degrees. Butter the ramekins and set them on a baking sheet. Place a bowl over simmering water and melt chocolate with butter until no lumps remain. In a separate bowl beat the eggs with sugar, add the flour. Fold the melted chocolate and butter into the egg mixture and add rum (or brandy).

Now the most important part - don't over bake the cakes. If you do, they will still be moist and very tasty, yet they are best when the inside is still liquid and pours out when you dig in.
Baking time is 7-10 minutes. Watch them closely when baking - once the sides become more solid and the middle is just stiffened, the baking is done. Remove from the oven, let them sit for half a minute, carefully turning each one over unmold them. Sprinkle with icing sugar and serve immediately with berries or other side of your choice.

The cakes are too sweet to go with most of wines. I served it with cherry liquor (in the photos) and also like it with Porto.
