The pan was a hand-me-down from my friend when she was moving out stuff from a vacation home by the seaside. She wasn't sure what to do with it and I thought there could be more ways to use it than just for usual pancakes. So far it has been potato pancakes, eggs and paninis - works perfectly!
When the weather starts to get colder and the days shorter, more comforty food kicks in, especially at the weekends. Last weekend I went with the potatoes and eggs for breakfast. Filling, tasty and something new.
And there's not much to tell about it! Very simple, pretty quick.
Ingredients:
* 1/2 sweet potato
* 1 potato
* 1 shallot
* 2 eggs
* Salt'n'pepper
Heat the waffle pancake pan.
In the meantime chop and fry one shallot on a bit of butter or olive oil. Grate potatoes and mix with shallots. Beat one egg and add to the mixture, add salt and freshly ground pepper to taste. Once the pan is hot, fry the pancakes.
In a frying pan fry one egg - sunny side up and serve over the pancakes with a bit of herb and garlic butter.
Et voila! The runny yolk over potato pancakes is so so so yummy :).
