Cream cheese muffins with marzipan and craisins...

Could not have said it any better! And the love of wine....? Hopefully not to be doomed as an alcoholic - I do sincerely love wine. Not just any wine - chilled, crisp, that leaves a trace of all the amazing mixtures of tastes well after the gulp has flown down the throat.
Got carried away... Back to muffins. Got home after work one of those days, when I desperately needed something good and tasty and couldn't tell what that may be. Decided to go for something sweet - to be made of whatever ingredients I had in the cupboards. Came across all kinds of dried berries and fruit and a huge piece of marzipan. Dediced to go with muffins. Although just the discovery of the marzipan at that moment was plenty enough to satisfy my tastebuds, but I had really gotten in the mood to bake something.


Ingredients:
* 200 g cream cheese
* 200 g sugar
* 200 g flour
* 150 g unsalted butter
* 3 large eggs
* 1 teaspoon baking powder
*  a handful of craisins (in other words - dried cranberries :))
* 50 g marzipan
* 1 teaspoon vanilla extract

Melt the butter and set it aside it to cool down for a little while. Whisk the eggs with sugar, add the cream cheese, melted butter, vanilla extract and the baking powder. Mix everything well using the mixer, add the flour and continue mixing until well incorporated. When the dough is ready, add the craisins and the grated marzipan.

Lay the muffin tray with the paper cups and pour the dough, filling each cup about 2/3. Bake the muffins in 180 degrees for about 20-30 minutes. Once done, let them cool for a little while before serving.



I am bad with following the recipes... Even when it comes to bakery and precision is super important, I still like to throw something in "extra" :). Marzipan being one of my favorite ingredients, I went a little "wild" adding 20 or 30 grams extra as well as throwing in an extra handful of craisins ;). Besides, in order to have a more moist effect, next time I'd soak them before adding to the dough and possibly even in something like rum.

However, if marzipan of dried cranberries are not amongst your favorites, try going for something like chocolate chips and dried cherries.
