Spanish omlette...

So not the case this time. Sometimes it is nice to go fancy in the kitchen. In such cases quite often the wallet doesn't appreciate it as much... Therefore I love this new trend of cooking with the locally found ingredients and re-inventing the traditional recipes. The Spanish omelette may not be much of the re-invention of something traditional and local, but those who don't like to waste any food or food leftovers most probably will appreciate it.




There is something special about Sundays - you can sleep in all you want, do whatever you want without being guilty of not accomplishing much on this special day that even the Bible tells to celebrate. I especially love those Sundays when the whole family is together and the greatest joy on such a day is to prepare a tasty and hearty breakfast or much rather brunch.



So once upon a time... I mean - One Sunday not so long ago... Found some day old boiled potatoes in the fridge and decided to make something filling, tasty and very very simple - the Spanish omelette!



Ingredients:

* Boiled potatoes
* 4-5 eggs
* A handful of fresh spinach
* 1-2 tomatoes
* Salt'n'Pepper
* A pinch of grated nutmeg


Besides the boiled potatoes and the eggs, go creative.



Slice the potatoes and lay them in a round oven pan. Whisk the eggs with the salt, pepper and a pinch of nutmeg, add chopped tomatoes and torn up spinach. Pour the mass over potatoes and bake in the oven in 160-180 degrees for about 20-30 minutes or until the eggs are set.



It truly is that simple!
