Champagne jelly with fresh berries

Nowadays in Lithuania feels like a tropical paradise - well at least for those that love hot weather. If thinking of a creamy, rich or sweet dessert at such temperatures doesn't sound anywhere close to appealing, go for this one - it will hit the spot.

A friend tasted the jelly and after a while commented - "getting tipsy while drinking champagne is understandable, but getting tipsy when eating it - that's something new" :).
Amazingly easy to make!

Ingredients:
* 1 bottle of sparkling wine (I always use brut)
* 150 - 200ml elder flower syrup 
* 250 - 300 g blueberries (cultivated)
* 6 teaspoons of gelatin

Disolve gelatin in a glass of water and heat it up a bit to disolve completely. Once done - mix the liquid with elder flower syrup, sparkling wine and berries. And this is it. Refrigerate until the right consistency - I simply make it the night before and refrigerate over night.

Served with fresh raspberries.
