Omlette with courgettes and courgette blossoms

Courgette = zucchini. Courgette somehow sound much more sleek to me :).I have been coming across recipes with stuffed courgette blossoms and wanted to make something with them. The most difficult part though was finding them. When visiting the farmers market in Vilnius and asking for courgette blossoms, I received several comments: "If you're looking for flowers, they are in that direction!"... So buying some at a regular farmer's market was no option. Finally I got some at one lady's farm. However the blossoms were so tiny, stuffing was not an option either. Et voila - omlette with blossoms pan fried in a bit of butter.



Ingredients:

* Eggs 
* 1 medium courgette
* 1 onion
* A few cloves of garlic
* Courgette blossoms
* Olive oil
* Salt'n'pepper
* Butter

As simple as it is making an omlette...
Heat the olive oil in a  pan. Cook the sliced onion and garlic until cooked through. Add diced, sliced or as you wish courgette. Cook for a few minutes.

Beat the eggs with a bit of salt'n'pepper and any other spices you may like. Pour over courgettes into the pan, cover with the lid and cook until done over medium heat. 

In a separate pan, fry the courgette blossoms over a bit of butter. They smell heavenly! Et voila! All done :).



Serve with bread and fresh tomatoes.
