Avocado stuffed with shrimp and sweet corn, topped with arugula

Come to think of it - this quote is off. Avocado is a fruit, but nevertheless, it definitely doesn't lack its purpose when accompanied with shrimp and sweet corn. One of the easiest snacks to make and in no time. Sounds dreamy - healthy, tasty, colorful and fast!


























I spent two weeks with friends in southern Spain. Although the weather didn't treat us two well - there was quite a bit of rain, but still - it was heavenly. Warm breezes of Mediterranean coast, amazing selection of seafood and most delicious fruit and vegetables. I could have lived solely on avocados, mangoes, oranges... Now as I am back home and it is not as nice outside, I can definitely live for a few days just looking at the food photos. Don't you just love that many colors on the plate?

Ingredients:
* Ripe avocado
* Shrimp - in brine or fresh (I used one in brine)
* Sweet corn
* Arugula
* Salt'n'pepper

Cut avocado in half, take the pit out, scoop the flesh and mash it. Mix with shrimp and corn, add salt and freshly ground pepper to taste and serve in avocado shells, topped with arugula. And that is it! Breakfast, lunch or light dinner - perfect for any meal.
