Egg noodles with forest mushrooms and soy

I think a lot of people over complicate things. In many aspects of life - and since food is one of the most important ones - in eating too. Lately mankind succumbs to the influence of fast paced days. Everyone is in a hurry, trying to accomplish too many things simultaneously. And although in the end of the day the result maybe is not what we aimed for, but we sure did feel busy. Rush to work in the morning, early meetings before lunch, a quick bite on the way somewhere paying less attention towards content versus time getting on your plate and down your throat or lunch with someone important when you don't even taste what's on your plate, because the "deal" is more important. The perception is wrong! We need to slow down - allow ourselves to sit, relax and actually enjoy every single bite of what we're eating.

Just a little bit of "googling" and browsing (what obviously everyone is good at) will land you at least a few ideas for breakfast/lunch/dinner that can be easy and fast to make, healthy, tasty and will not list a bunch of ingredients on the label that you don't understand or possibly don't even care to read. 
So cutting my reflections on busy life shorter - let's get to my last Saturday's dinner with my (soul) sister. We hadn't seen each other for a long while and there was so much to talk about over a glass of Chablis, that we even considered skipping the cooking part. There was a plate of amazing French cheeses in front of us anyway. But still - she had laid out a whole bunch of different noodles and pastas and I did bring a bag of forest mushrooms. Plus there was a bottle of wine saved for the food in the fridge. 

With a lot of talking while cooking together, we had the dinner ready in no time! 

Ingredients:
* 1 packet of egg noodles
* A few handfuls of forest mushrooms
* 1 onion
* 1 garlic
* Herbs
* Salt'n'pepper
* Olive oil
* Soy sauce

We cooked noodles per recommendations on the packet - 10 minutes boiling, draining and rinsing with some cold water.

While noodles were boiling, we chopped onion and garlic, cooked in a bit of oil with herbs, salt and pepper. If you plan on using salted soy sauce, beware of overdoing with the salt. When the onion and garlic softened, added the mushrooms and cooked for another 5 minutes.

As simple as that - added noodles to the pan, tossed with mushrooms, added a generous amount of soy sauce et voila! Dinner in under 15 minutes!
